Nice apple pie

25 dkg flour
5 dkg sugar
15 dkg butter
2 tablespoons cream
grated lemon zest
1 kg apples
1 vanilla sugar
4 tablespoons sugar (depends on how sweet you like it)
3 dkg raisins (soaked in rum for 1 hour)
cinnamon as desired



1. Knead a short dough of flour, sugar, butter, cream, lemon zest, and wrap in transparent foil. Leave in the refrigerator for about 2 hours.
2. Peel the apples, grate them and put them in a deep bowl on a low heat, and stew them until they are golden brown and soft (the apples release their juice by themselves, so you don’t need to add water).
3. Cool the apples and pour off the excess liquid, then add vanilla sugar, cinnamon, raisins, and sugar.
4. Divide the dough into two parts. Roll out the first part on greaseproof paper and transfer it to a greased round mold (size 24 cm). Roll out the second part of the dough and place it over the apples.

5. With a fork, “prick” the dough in a few places, just enough to allow air during baking.
6. Place in a preheated oven at a temperature of 180 °C for about 45 minutes.
7. When the pie has cooled, sprinkle it with almonds and powdered sugar.
